Pesto Recipe


2 packed cups of fresh basil leaves
1 clove of garlic
1/3 cup of pine nuts
¼ cup of grated parmesan cheese
½ cup extra virgin olive oil
Salt and pepper to taste


Put basil leaves, garlic and pine nuts in a mortar and pestle or small food processor and grind until a rough paste forms.

Stir in cheese.

Slowly pour in a thin stream of olive oil and stir into basil paste mixture. Adjust seasoning with salt and pepper.

Keep refrigerated in an airtight container under a thin layer of olive oil.
